Love Culture Fashion Finds

I've been hanging on to a gift card from Love Culture for some time and figure I'd go browse their website today. Sadly I didn't find anything that really caught my eye. I did find some basic goodies such as black tops, white tanks, simple-toned scarves, and earthy jewelry. Check out my likes below:
I really liked this messenger for daily day use, maybe for going to the library, running errands, or to pack some things for the weekend. The scarf caught my eye because of its classic and modern print style. I think squarish-round glasses suit me the best because I have a round face shape, anything too round or too small in frame is a no-no for me :). I also liked this casual black and white striped top to go with some leggings and wear walking out on the lake one day, if it ever gets sunny here in Seattle. I also thought this lacey white top would be cute with jeans, of course with another white tank underneath to keep things modest.

Well, these two tops are pretty similar to the ones I had just mentioned above lol. I'll just note that I think the peekaboo shoulders is a cute trend right now and that the front shirring of the white tank elongates us petite girls so that's why I picked these two. The FedUp with Boys shirt and Stop Looking at Me shirt, I thought was pretty unique and funny sayings but I don't know if I'd actually wear these out, lol. Just thought I'd share them. Would you wear these out?

I loooove these jewelries! I'm going to look for them next time I'm at the mall ;). I love the half shell silver necklace because it reminds me of the Philppine Islands. Growing up as a child, my cousins and I would all pick out the prettiest shells on the beach and save them as souvenirs . I also really like the silver bow ring as it shows my feminine side and the leaf ring shows my more simple, care-free side. The bracelet is pretty funky yet still remains in the simple-earthy category with a touch of rockerish with its thickness and metal chains. Has anyone bought jewelry or even clothes at Love Culture before, how do you think their quality holds up? Does it rust? Fall apart?

Last but not least, I picked out a few cool-toned scarves I thought would look good and keep you toasty on a casual day. I love scarves because they elongate your body. Black is also slimming, so I chose this cotton cardigan, long cotton shirt, and cotton leggings to possibly pair with the scarves or even for just basic essentials. Hope you like my picks and I'd also love to see your picks :).

Tuna Melt Sandwich Recipe

Tonight I made myself a delicious Tuna Melt Sammy, lol I made a pun! A Tuna Melt Sandwich is something anyone can whip up in 5-10 minutes.

All you need for this recipe is:
  • canned tuna (1 or more)
  • onion (1/2 or more of 1)
  • mayo
  • wheat bread
  • slice of mild cheddar cheese
  • teaspoon of butter
  • pepper, salt or Johnny's seasoning, and
  • a pickle for a side snack.
1. First you want to chop up the onion into thick or thin pieces, it really just depends on your taste. I kind of just slice the onion thinly then chop it casually so I have assorted bite size pieces.

2. Second, combine the drained tuna, onion, and mayo in a bowl or tupperware if you want to save some for later and mix everything thoroughly so that each piece of tuna is nicely covered with mayo. Now, the amount of mayo again just depends on your taste. Put less if you prefer a more tuna and onion taste and don't mind it being that dry (of course you can just add some olive oil to kill the dryness), or put more if you like your sandwiches with a thinner spread. Salt and pepper to taste.

3. Next, you want to coat your frying pan with butter under medium heat. The trick here is to use a large enough pan that you can flip your sandwich easily without breaking it apart or, use a toaster oven ;). Now once that heat is going, make your sandwich with the tuna and the cheese and place on pan. Fry each side until cheese looks melted and bread is browned. Place on plate with pickle and viola! You're done. Enjoy!

You Can Wear Bare Minerals Foundation Wet

I've been thinking about switching to a liquid or cream foundation from Bare Minerals because I feel the coverage would just be much smoother and more covering up of pores, then I saw these videos. I knew that you can wet Bare Escentuals eyeshadows, but I wasn't aware you could do it their foundation as well. I'm so excited to try this method! I already have the Bare Minerals foundation, kabuki brush, and Mac fix+.

Here's the video detailing the method:

I really want to try the Mac Charged Water she's using because she emphasizes it's smell. Mmmm. Her routine consists of: spraying before moisturizer, a primer, a concealer, mineral foundation with spray, mineral veil powder, and then spray again. Remember to apply the mineral veil dry as it will act as a setting powder for the wet method. For minimalists, moisturizer then spray with foundation is sufficient with optional mineral veil setting. :)

Here's a shorter demonstration of how to put it on wet:

How do you like Bare Minerals or trying this method? Is there a better liquid or cream version?

I've never signed up for jobnab before so it makes me wonder where they saw my resume or how they got my email address.. hmmm... third party job sites selling my info? or might it be that job scam I accidentally signed up for at johnsonandarmelconsulting.com after doing a job search yesterday. Great, what did I get myself into.
I did a quick google search of "jobnab review" and it quickly got me to a consumer protection site, "Jobnab Reviews-SiteJabber Consumer Reviews of Jobnab.com," which details how they've contacted people and used their information for scams. Indeed.com even has a forum for scams and lists jobnab.com as one of them here: Denver, Coloardo Forum-Job Scams-Indeed.com

I quickly clicked unsubscribe from the email so I'm hoping that takes care of it.

I figured johnsonandarmelconsulting.com was a scam after doing a quick google search of "johnson and armel scam, and the the following site showed up: Johnson & Armel Consulting and Staffing Services Complaints - Scam, a site maintained by a complaints board. Johnson and Armel is a Job SCAM

Today I was doing a job search on indeed.com for a call center position and was lead to this link: http://bellevue-wa.geebo.com/jobs-online/view/id/50005601-inbound_call_center_agent/?src=indeed&utm_source=Indeed&utm_medium=organic&utm_campaign=Indeed, which is Geebo.com, a claimed "safe community classifieds."

When I clicked on the Contact Information to send my resume it redirected me to http://www.johnsonandarmelconsulting.com/application2/app1.cfm?jobPositionID=12334, a Johnson and Armel Consulting and Staffing Services company. It is a very deceiving website because at first glance it actually looks legit.

The page gave information on the job you are applying to:

Category: Customer Service and Call Center
Description:
We offer great benefits and the ability to move ahead in a fast paced environment and a competitive hourly rate $10 - $13 per hour depending on experience.

Call Center Agents need to have a high school diploma or GED. Previous experience in a high volume inbound or outbound call center environment is highly desired but not required.

Then, it asks commonly asked questions in job applications such as name, address, phone number, email, resume attachment, education level, employment desired, education, currently working, that stuff.

So once, I filled everything out, it then told me to contact 1-877-659-0133 for a screening process. It also offered to schedule a time for the screening process if I was unavailable to do it at that time. I figured well, Wells Fargo had a similar process so it never crossed my mind that it wouldn't be legit.

Next, I call the number and a women answers doing the rundown on the screening process asking me typical questions like salary desired, experience, and address. I'm close to ending the conversation with the lady and then she asks me a question along the lines of "Mam, what if you were given an opportunity to go to school with all expenses paid, how likely would you be willing to do this." That's the head scratcher!! If you say yes, they transfer you to another person, I'm assuming the deal closer person who signs you up with a school matching your interests. I hung up quickly, disappointed that I already gave them all my information and wasted all that time with them.

I did a quick google search on this site and quickly found out this company was a scam. You can read details on them here: Johnson & Armel Consulting and Staffing Services Complaints - Scam.

My Capital One Rant and Credit Card Tips To Save You Money

I'm pretty upset today.. I just got off the phone with Capital One to dispute some charges. Apparently I accrued $85 in past due fees and $39.54 in interest charges for the past 3 months. I was shocked to hear about this especially since I have enrolled myself in the Automatic Bill Payer with Bank of America to avoid this exact type of thing. I called Capital One and told them that my account gets debited every month on the 11th to make a payment and that my statements say the bill due date is on the 12th. They told me that it takes a few days for payments to process and that it was Bank of America's fault for not processing the payment on the said date. I'm going to have to call Bank of America tomorrow to get things straightened out because why am I getting debited money on the 11th and it going no where until the 15th. Then, if that was the case why don't they just take my money out on the 15th instead of the 11th??

Also, why is it when I didn't have Auto Bill Payer and would pay my bill online at CapitalOne.com on the same day, they were able to process it the same day? They're telling me that B of A must've debited my account but just not process it until 3-5 days later, according to my files. Nevertheless, they are sticking me with the $85 in past due fees. Oh don't I feel like such a valued customer. If I could just cancel my account with Capital One without it affecting my credit score I would do it in a heartbeat. It's like credit card companies just take advantage of people for this reason.. I'm hoping for a policy change soon!

Let's also not forget, that we all make mistakes. In the previous months, Capital One has "accidentally" increased my credit limit twice in one month to 7 times its original limit. I was surprised and flattered at the same time. I thought, wow, I must be doing really good credit-wise for them to do that. Then, a month later, I receive a letter from them saying they apologize for increasing my credit limit the second time and that they will excuse any over-the-limit balances and interest fees caused by this. Well alright. We all make mistakes..

But here we are, months later, and have they fixed these charges? No. I have to go out of my way to make sure they do what they say. I was able to get 2 months waived (March and February), but not the very first month (January), which makes no absolute sense at all. The customer service rep said he would make a note now and to just call on my next billing statement to get it fixed.. Okay, so here I am again, needing to make time to get them to do what they said... This is just ridiculous. With this in mind, people/businesses make mistakes, they should waive all accessed fees. They should understand that my past due fees were not intentional and that I have corrected them by changing the future due date of my bill to be a week later to account for "processing." I have been an outstanding customer so far and they should value customers like me :).

I think I will be writing them a letter to get them to waive those fees and make a customer service dispute online as well. Maybe someone else will handle my problem differently and to my advantage. Well, with that said, I'd like to offer some credit card tips.

Credit Card Tips That Will Save You Money:

1. Pay your credit card statements a week before the due date to avoid any mishaps, like mine.

2. Sign up for Auto Bill Pay through your credit card company, if free, or with your savings/checkings account company(they are usually free).

3. To make sure you have an even flow of money going in and out, pay your credit card bill in the middle of the month when you have no other large bills to pay for. Let's say you have to pay rent and electricity on the first of each month. By paying your credit card statement mid-month you are able to have some extra cash flow throughout the month after paying your rent. This method leaves you with less stress having to pay a large lump sum at the beginning of each month. You can change your billing due date online or by calling customer service and this is a relatively easy task.

4. If you have credit card debt and are unable to pay off your credit card bills in full each month, you should pay your credit card bill days or weeks before their due date. Let me tell you why. Each day you have money owed and interest is accrued. By paying long before the due date you are saving yourself these interests.

Just because you pay the minimum amount due, does not mean no more interests will be accrued the following month, it will decrease them if you pay early though. Interests are accrued until the balance is paid in full. That is why it is important to pay your balance in full each month.

5. Another variation, of the above tip for those with budget constraints is to make micropayments. You can pay $5 each day to the credit card company, if they allow this to decrease the daily interest rates or even try splitting the bill in half, and pay half of it early and the other half by the due date.

*Remember to make sure that this method is okay with the company otherwise they may hold multiple payments for next month. Also, remember to clarify which payment goes to which cycle, never assume they know to avoid any fees and hassles. To read more on micropayments go here:
http://www.bankrate.com/finance/credit-cards/pay-credit-card-bill-early-and-save-2.aspx

6. Don't spend more than 1/3 or 30% of your credit limit. Using any more than this and your credit score will go down. Now, if you do use more than 1/3 of your credit limit, just make sure to pay all the balances on time to avoid any charges. But, if you go this route, and you get a credit check mid-cycle and they see you are using more than 30%, your credit score will be lower, and this could affect that interest rate you get for that new car loan or mortgage.

7. Another thing that will affect your credit score is how frequent you authorize credit checks or credit inquiries, for example, to get that rewards card from retail stores like Victoria's Secret, Macy's, JCPenny's or Best Buy. The more hits you have of these the lower your score will be. Make sure to avoid any hard credit checks authorizations a year prior to getting a big loan to ensure a higher score and a lower interest rate. Also, make all your hard credit checks in one period, 30 days, and it will all count for a single inquiry, dampering your credit score only slightly.

"Take a moment and evaluate your life. If you are in a constant state of evaluation, it will engage you in positive action."

"Consider the people you have around you and then do the math: Do they take from or add to your life?"

"Your inner self is without any ulterior motives and will keep you out of harm's way. Just listen."

Review (Rant): Confetti Cupcakes in Issaquah

I first heard about Confetti Cupcakes through one of Groupon’s Daily Deals and thought about what a bargain it is to get a dozen aesthetically pleasing cupcakes for $16, a 52% discount of the normal $33 price. When I bought this coupon on Jan. 24, 2011, I thought I might use it for a special occasion such as a holiday or birthday for my family. Well, Valentine’s Day rolls by and I thought why not just get the cupcakes to share with the family on this day?

So, the day of Valentine’s Day, at 1:52pm, I called to ask if the cupcakes had to be pre-ordered or if I can just drop in and pick some out like you do at a doughnut shop. The phone just rang a few times and then it went to voicemail, so I left a message. An hour went by and I was getting antsy so I called again, and still no answer. I figured they must be really busy given the holiday and all so I just gave up on that idea for the day. I wonder how many other customers they lost that day because they couldn’t answer their phones? A smart business would utilize the holidays for that surge in sales.
Anyways, I get a call back the next day at around 12:33pm from Barbara who asked if I wanted to make an order and told me to just give her a call back when I get the message. I was kind of irked that she didn’t answer my question I left on their voicemail asking if I need to make an order or if I can just stop by. So, I called back to get clarifications and she said “Oh yeah, that’s fine, just come on down, I put your name down for 2pm and we’ve just got a batch baking right now…” Hmmm I thought it was interesting she mentioned putting my name down since she said it would be just fine to walk in?? Neither did I ask her to put my name down and told her I wasn’t planning on coming in at that time but at a later time. I thought it didn’t matter what time I came down since she said I could just walk in and not need to preorder.

They look better than they taste

So, I decided to drive up there on the following Saturday, today, the 19th of February, since it’s about a half hour drive and since I made plans to do some shopping up on the Eastside today. It was around 4pm when I got there and two families were in front of me, so I thought it to be a good thing that the place seemed busy. Finally it was my turn to order and I told her that I had a Groupon that I wanted to redeem. She asked if I had placed an order yet, and I told her I hadn’t but called a few days ago and I was told to just come in. She gave me this look like “aww I’m sorry but you have to place an order 24 hours in advance since it’s such a big order.. blah blah blah.”

Like, why the hell did you tell me it was okay in the first place?! Is my Groupon order not worth that much to you!! So then she tells me that just this one time, she’ll let me take the order, but to make sure to call in advance. I was just so turned off by her contradictions. Then not only that, there was a couple behind me that she said she was going to take their order first since mine will probably take longer. Wow, my first impression of this place has seriously gone down the drain. So, I sat there on my iphone, writing my first negative draft review of this place, boy does this woman have no idea what I’m about to tell the world about her place!
The couple asks Barbara if she owns the business and what Groupon is. Then, she tells them, “yes, me and my son do.” She also said that the Groupon thing was to only get the word out and that they don’t normally do discounts, reassuring me that my Groupon business is not good enough, thanks.
It was finally my turn and I just wanted to get it over with as I just didn’t want to be in her pretentious little store anymore. $3 cupcakes my ass. I ordered a variety of flavors just so I can make an adequate review of their different flavors. I asked if I was done paying with the  Groupon and she tells me “yeah, Groupon takes half of what we make so it’s sucks for our business.” I’m thinking in my head, then why did you offer Groupons?! I sucked it up and said “thank you,” as I rushed out the door.

What a horrible first impression I had with this place. I come in there hoping to have a pleasant cupcake experience and the first words that comes out of this lady and last words were all negative. Please keep your negativity away from me. The cupcakes weren’t all that great. I got 2 of the Red Velvet and 2 of the Carrot Cake since I read on Yelp that these were the best flavors. The Carrot Cake was dull and had more of a ginger flavor. The Red Velvet was the best flavor of all the cupcakes. The combination of the rich flavored cake, soft-center, and creamy frosting was amazing, but definitely wasn’t worth the experience or drive I had to go through.

From top left: Cookies and Cream, Chocolate Mint, Carrot Cake, Red Velvet, Tuxedo Chocolate, Vanilla/Vanilla, Strawberry, Coconut, Peanut Butter/Choc, Red Velvet, Chocolate/Vanilla, and Carrot Cake.

Everything else was bland. The Peanut Butter needs to be richer, as I was expecting a Peanut Butter Cup Reese’s taste. The Strawberry Cupcake was just gross and too sweet. The Coconut one was also gross. The Cookies and Cream Cupcake just tasted like Oreo frosting on top of a chocolate cupcake. I was expecting the frosting to taste like the combination of Cookies and Cream. I thought the Chocolate over Vanilla Cupcake was good, but then again I can make this for less than $3 at home and make it just as good. So, if you ask me if I recommend going to this place. I’d say no, make your own cupcakes at home and save the trouble of horrible service or go to any place else. Don’t waste your money here.

*Parking is also a pain.

Simple Green Beans and Ground Pork Recipe (Filipino Ginisang Sitaw)

This delectable Filipino dish is a staple must! It is called "Ginisang Sitaw," which translates to "Sauteed String Beans." Not only is it savory, but healthy too as you get a good dose of your green beans, garlic, and tomatoes. Create a balanced meal in under 10 minutes.

Ingredients:

1 Bundle of String Beans
1 Medium Tomatoe
3 Cloves Garlic
Ground pork
2 Tablespoon Olive Oil
3-5 Tablespoons of Soy Sauce depending on taste
Black Pepper to taste

1. Chop up your string beans into bite-sizes. Then chop up your onion into your preferred size, I like mine to vary so I just chop it freely. Next chop your tomatoe into thinner slices so that its consistency is barely detectable when you sautee it. Lastly for preparation, mince the garlic.

2. Heat the oil under low to medium heat (just depends on how long you want everything to simmer) and then throw in the garlic and onion. Once, the garlic has turned to a brownish color, throw in the tomatoe and ground pork and let it simmer for about 5 minutes and stir fry occasionally. Be careful not to overcook it or the pork will dry out.

3. Next, toss in your soy sauce and black pepper to your preferred taste and mix well. Then finally, throw in your string beans and stir fry until the string beans have cooked to your liking. I served this over white rice but for a healthier alternative, top it over some brown rice or basmati rice.

*Optional: You can also add some fish sauce with or instead of the soy sauce in place of salt.

To make sure you're doing it right you can check out a very similar recipe with step-by-step directions with photos for each step at: http://stepbysteprecipe.com/2010/10/03/ginisang-sitaw-2/. According to this website, you shouldn't cook the string beans for more than 3 minutes, so keep that in mind. Good luck.

The Lemongrass Restaurant Review on First Hill, Seattle (across from Seattle University)

Beef Noodle Soup aka Pho

I came upon  The Lemongrass by accident as my colleagues and mine’s first choice was this Italian Restaurant across the street from the CASA training building that we found out was closed during day hours and only opened at 5pm. It was our lunch hour at the time so we settled for this nearby Vietnamese restaurant. We were in luck because although the place was very busy, we were able to get a table right away. The exterior of this place has no justice on what you’re in for.  You take notice of the the air, which was filled with exotic smells of spices and aromatic herbs as soon as you walk in.
Curb Appeal: The place was decorated with its Asian-Vietnamese theme, with lots of bamboo and floral/plantal designs. There was also a large wall-sized waterfall type of décor on the side of the entrance. The seating was a bit tight as the interior was small, but this was common for Vietnamese restaurants. Seating by the door was too breezy with the wind blowing in from people walking in and out, so I’d avoid that area if you tend to get cold.

Customer Service: We came during lunch time, so it was very busy. The service here was average. I was upset that they didn't serve my Pho of choice, which is White Meat Chicken Pho. Our server said they only had the dark meat kind, yuck. I settled for the Beef Pho. My colleagues ordered Grilled Pork Sandwhich, Grilled Chicken Sandwhich, Fresh Spring Rolls, and a special order of Chili Paste Tofu with Chicken, but she had to order Rice separately (surprisingly rice is not included?).

The server got the sandwhiches mixed up, saying one was chicken when really it was pork. Wouldn't that have been a shame if she was a Muslim or Jewish. Luckily, our group is pretty happy-go-lucky people, we didn't make a fuss about it. I give them points for the chocolate mint for my basil breathe and getting us separate checks with no fuss and in no time.

Fresh Spring Rolls with a side of Peanut Sauce.
Photo Credit by Marissa S. on Yelp.com
Food Quality: The Pho was ok, there was nothing special about their broth. I was pleased they weren't chintzy with the add-ons (lime, basil, cilantro, bean sprouts, and jalapeno peppers). My colleagues complained that there wasn't enough meat in the sandwhiches nor in the special Tofu order, so I'm thinking if they had a do over they'd order a heartier meat dish. I thought my Pho had plenty of meat though, but if I had a do over, I'd try one of their Vermicelli bowls or Vegetarian dishes. The Tofu there looked yummy! All in all, with these prices, it beats going to a fast food restaurant, and it's much healthier for you.

Price: Affordable!! Most all the entrees are under $10. A great place for lunch with colleagues.

Specials/Happy Hour: They're specials vary weekly, this week they had Vietnamese Sandwhiches for only $5. You can check on their website what their current specials are.

Nail Polish Review: OPI Nail Lacquer Diva of Geneva

OPI is a reputable brand name when in comes to nail polish. Their nail polishes or excuse me, nail lacquers have thee best shine compared to other leading brands and holds up the longest, from my experience. Currently I am sporting their "Diva of Geneva" color. It is sort of a brick red color with purple-violety tones.

This is what it looks like with my camera flash on. You can clearly see the purple-ish tones.

This is more of its true color.
I applied a base coat first and then two coats of the polish after. I didn't apply a top coat yet and it's still really shiny. This color is definitely a classic and can go with any outfit color.

Trapper's Sushi in Covington Review

From Top to Bottom: Crystal Delite, Budda, and Timmy Rolls

It's no wonder people rave about Trapper's Sushi as the best sushi in the South King County area. They have exceptional customer service and sushi that tastes so fresh and unique than any other sushi restaurant. After trying this place for the first time, I was hooked. I will definitely be adding Trapper's as one of my go-to-craving restaurants. You get what you pay for here, as it is no $1.00 plate serve yourself Sushi Land stuff, and each roll is artfully hand-crafted to hit your every taste bud. So if you haven't tried it yet, I'd advise you to go.

Curb Appeal: I was immediately delighted to see the iridescent blue sign of the restaurant which reminded me of a downtown lounge/martini bar from outside, and although it's in the parking lot of a Kohl's, the curb appeal was still classy and conveniently located in South King County. Unfortunately, there is not one in the downtown Seattle area yet. The interior offers bar seating, regular tables, and booths with bright daylight lighting. They also have medium-to-large flat tv screens above where you can watch your favorite sport's shows.

Customer Service: Exceptional. As soon as you walk in, the hostess' booth is conveniently placed on the right side of the entrance, so you have two hostesses to greet you a warm welcome. I came on a Tuesday evening, around 6pm and was seated right away. As the evening went on the place got busier. I was delighted that our server quickly offered to take our drinks and without even asking, she told us what the day's Specials were and answered all of our questions with ingenuity. I was surprised how on top of her game she was, as I gabbled my life stories to a friend who sat across from me, not a second went by where I had to ask for another drink or refill. Even when we left, we were given a warm "good bye."

Food Quality: I think the presentation of the long rolls were phenomenal. Everything had amazing unique flavors and textures. I especially love my rolls with a crunchy coating and spicy inner. The Timmy long roll was huge, as you can see from the pic above, and hard to eat in one bite, but was delicious with its spicy crab tuna, salmon, yellowtail, coated with tempura and hot sauce.

Price: We ordered the Crystal Delite, Budda, and Timmy Rolls, averaging about $9 each. Edamame was $4. A few glasses of White Zinfandel was $4 each. So, the menu is not particularly expensive nor cheap but moderate with each entree costing about $10-15.

Specials/Happy Hour: All-You-Can-Eat Lunch $17.95 Dinner $26.95

How to Make English Muffin Mini-Pizzas

Hello pizza lovers out there! I'll be sharing with you a simple recipe to make mini-pizzas using english muffins. This recipe is so simple and easy, kids can do it. It's just as easy as making a peanut butter and jelly sandwhich, all you need are the right ingredients. Once you try this pizza recipe, you'll want to make it over and over again and will think twice about ordering Pizza Hut or Papa John's. It's cheap and the best part is, you get to control what goes on it. You can make it as lean or as meaty as your heart desires. But I'd opt for the healthier version.

Prep Time: 5-10 minutes
Cook Time: 5-10 minutes
Total Time: 10-20 minutes

Ingredients:

English Muffins
  • I like using whole wheat, whole grain, multi-grain, or other healthier variations than the plain white ones that are insufficient in fiber
Spaghetti or Pizza Sauce
  • I use Prego Veggie Smart because it's just way better for you, 50% of daily vegetable recommendations and 25% less sodium
Margarine or Butter or Olive oil
    Shredded Cheese
    • Any kind will do, even a block of cheese will work as long as you thinly chop it so it melts fast.
    • Mozarella is the most favored. I like using Three-Cheese Blend. Some use Cheddar. For a healthier option you can mix non-fat/low-fat shredded cheese with the regular kind, 50/50, or just use the healthier one by itself.
      Condiments
      • In the picture above, I used garlic, olives, and red pepper because this is what we had. Use whatever you have in your fridge.
      • Some ideas for you: mushrooms, green or yellow bell pepper, sliced peaches, caramelized onions, pineapple.
      Meat
      • I used pepperoni
      • Some ideas for you: ham, chicken, meatballs, bacon.
        Directions:
        1. Preheat the oven to 375 degrees (a mini-toaster works too).
        2.  Split your english muffins into halves and then butter them.
        3. Use 1 spoonful of pizza or spaghetti sauce to coat the top of the english muffins, go thin or thick depending on your desired taste.
        4. Mince the garlic and put on top of each halve. Dice the red pepper and olives and add on top as well. Next sprinkle the cheese on top so everything looks even and then add your meats, for me it was pepperoni.
        5. Put in the oven for 5-10 minutes or until the cheese has melted and everything has browned.
        6. Optional: Sprinkle with parmesan cheese and crushed red pepper.
        7. Another option: use Siracha for spicyness.
Remember: Butter, sauce, condiments or cheese, and then meat. Voila!

Now that you get the gist of it, I hope I've inspired you to try recipes of your own in creating mini-pizzas. Meat is not a necessity, you can just eat with cheese, sauce, and veggies or fruit. De-lectable! You can make chicken alfredo mini-pizzas by substituting the spaghetti sauce with alfredo sauce and using chicken instead of pepperoni. Good luck!

I dedicate this post to a great friend and confidant who shared this idea with me. Thank you Tierra M. :)
